KISS Muffins

I've been trying to pinpoint why I'm not feeling well lately and simple, plain muffins sounded like a good idea.  KISS for Keep It Simple Stupid.  I'm still not sure what is making me feel sick all the time but it isn't these muffins!

They remind me of sweet corn bread muffins without the evil corn.  They taste great for breakfast but I can totally see them on our next Thanksgiving table too.  With gravy.... Oh yeah.

Preheat oven to 400 and grease muffin tin (I get 9 big muffins from this recipe.). I also kind of over grease the muffin tin so the sides of the muffins get some color.  I use softened Earth Balance to grease my pans.

2 cups GF baking mix
1/2 cup sugar
3 teaspoons baking powder
Dash of salt
3/4 to 1 cup vanilla soymilk, or whatever milk you use
1/3 cup vegetable oil

Combine the GF baking mix, sugar, baking powder, and salt in a medium bowl.  Add the 3/4 cup of soymilk and the oil.  Stirring from the bottom, mix until combined adding any extra soymilk if too dry.

Spoon into prepared pan and bake for 17-20 minutes, rotating your pan half way through the baking time.

Let cool in pan one minute.

German Chocolate Caaaaaake For Reals

Jennie and I were dying for cake on Saturday.

This is the best cake for making German Chocolate Cake.  It is already moist, it is super easy, and lasts a few days even without this frosting.  This frosting makes it like a super moist brownie!

This couldn't have been easier if it was a box mix.  No joke.

3/4 cup GF baking mix
1/2 cup sugar
1/4 cup cocoa powder
1/2 teaspoon baking soda
Dash of salt
5 tablespoons vegetable oil
1/2 cup vanilla Soymilk
1/3 cup mini chocolate chips

Preheat oven to 350 and grease and dust with GF baking mix an 8" square pan.

Combine the dry ingredients, making sure you get any lumps out of the cocoa powder.  Add the oil and Soymilk.  Stir until smooth.  Pour batter into prepared pan

Bake 15 minutes or until done in center. Remove cake from oven.

Turn off the oven and set it to broil.

Coconut Frosting

1/4 cup Earth Balance stick margarine
1 cup unsweetened coconut shreds (Let's Do Organic is the brand I use)
2/3 cup sugar mixed with 2 teaspoons maple syrup or 2/3 cup brown sugar
3 tablespoons vanilla soymilk

While your cake is baking, in a small saucepan melt the margarine.  Remove from heat and stir in remaining ingredients.

Spread frosting on finished cake.  Broil frosted cake for 4-6 minutes or until golden brown.  Please watch the cake the entire time it is in the broiler.  It can go from just needing a second more... to ruined.

This cake tasted great warm from oven and even TWO DAYS later.  I mean, gluten free doesn't always remain great after a day...

Enjoy!

Mmmessengered by Mary Chocolate Cake

I'm celebrating the removal of the stents placed after my gallbladder removal.  More than that, celebrating it going smoothly and uneventfully.

My friend sent me a picture of an amazing chocolate cake today and I had to make myself some chocolate cake too!

This couldn't have been easier if it was a box mix.  No joke.

3/4 cup GF baking mix
1/2 cup sugar
1/4 cup cocoa powder
1/2 teaspoon baking soda
Dash of salt
5 tablespoons vegetable oil
1/2 cup vanilla Soymilk

Preheat oven to 350 and grease a mini muffin tin.  I got 15 mini muffins.

Combine the dry ingredients, making sure you get any lumps out of the cocoa powder.  Add the oil and Soymilk.  Stir until smooth.  Pour batter into a measuring cup and pour into tins filling until nearly full.

Bake 12 minutes.  Remove from pan and cool.

Ganache

1/2 cup semi sweet chocolate chips
1/4 cup hot vanilla Soymilk

Put chocolate chips in a small bowl.  Pour hot Soymilk over chips and stir until smooth. Cool on counter for a bit.

Dip the tops of the cupcakes in the ganache.  Eat in one bite.  It is required.

No Fry Coconut Donut Cake

One of my all time most popular posts is for No Fry Donut Cake.  I've made it even better by turning it into coconut donuts!  Im a bit ga-ga for coconut right now.

1-3/4 cup GF baking mix
3/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
5 tablespoons flaked unsweetened coconut
Dash of salt
1/3 cup melted margarine
1 cup vanilla soymilk, or whatever milk you like
1 tablespoon maple syrup

Preheat oven to 350 and grease the bottom of a 8" or 9" square pan.

Combine the above in a medium bowl and mix by hand.  Scrape into your prepared pan.  Bake for 30 minutes.

While the cake is baking, melt 1/4 cup margarine and set aside.  You'll also need to toast in a dry pan about 1/2 cup of unsweetened flaked coconut.  It only takes a minute.  Don't walk away from it.  Stir constantly. Set aside with the melted margarine.  You'll need these to top the donut cake!

As soon as cake comes out of oven, pierce the top a ton with a fork.  I have to dip the fork in the melted margarine to keep it from sticking too much.

Brush the top of pierced cake with the melted margarine.  Sprinkle the toasted coconut over that and gently press down onto cake.  Mmmmmmm.....  Smells amazing!

Look at it!  I'm dying....
